St. Patty’s day is one of my favorites, so I like to get the kids excited about it too with fun treats like these. Every little leprechaun searches for the end of the rainbow and their lucky pot of gold. Let your child enjoy their own magical rainbow and lucky gold with these rainbow cupcakes and chocolate coins!
Ingredients:
- White cake mix
- Food coloring (red, green, blue, yellow)
- Baking cups
- White or Green frosting
- Golden foil wrapped chocolate coins
- Muffin pan
How to make:
RAINBOW COLOR | DROPS OF FOOD COLORING |
Purple | 9 red and 6 blue drops |
Blue | 12 drops |
Green | 12 drops |
Yellow | 12 drops |
Orange | 12 yellow and 4 red drops |
Red | 18 drops |
1. Prepare any white cake mix of your choice and then separate the batter into equal parts among 6 small bowls. Using the chart, dye each bowl a different rainbow color.
2. Line the muffin pan with 16 baking cups, and with a spoon begin evenly distributing the purple batter into each cup. Next, spread the blue batter, and so on, following the above color chart. Make sure that each color evenly covers the color laid down before.
3. Bake the cupcakes as shown on your cake mix recipe.
4. When finished and cooled, apply frosting to the top of each cup cake and serve with a golden chocolate coin.
