We don’t always have time to be in the kitchen for hours preparing up a delicious and healthy meal. Here is a fast, and still nutritious, frittata recipe the whole family can enjoy!
Ingredients:
1 tablespoon of butter
6-8 eggs
1 pint of halved grape tomatoes
4 finely sliced green onions
3 minced garlic cloves
greens of choice (we prefer baby spinach & green bell peppers)
salt and cracked pepper
Casserole dish or muffin pan
Instructions:
Preheat conventional oven for 10 minutes at 400
In a medium saucepan, melt butter and sauté onions and garlic for 3 minutes, then add the halved tomatoes for about 2 minutes-long enough so that the flavor settles in. Add the greens, salt and cracked pepper.
In a separate bowl, whisk the eggs and pour into saucepan
Place all ingredients in the dish, or muffin pan for bite sized ones, and then into the oven for 10-15 minutes or until browning occurs.
You can serve this on a bed of salad to enjoy for lunch or dinner! The frittata is a great way to mix it up, and use any extra veggies, cheese, (or even ground turkey for a healthy meat alternative) that may be getting older in your refrigerator.
