Cajun Foil Packet

Cooking a foil pouch full of delicious veggies and meat in the oven is so easy, it’s unbelievable! I just dump my favorite bite sized pieces of vegetables and cooked sausage onto a large piece of foil, wrap it up, and pop it into the oven, on the grill or the campfire! It’s the perfect cook on the go meal.

I recently tried an adaption of my favorite quick din alternative and it was so yum I had to share. This recipe takes the standard foil packet meal and adds some savory Cajun flavor (and rice!), that’s pure quick cooking genius. It makes four to five servings.

Ingredients:
3 cups cooked rice (I used brown but white works too)
2 cups cooked shrimp (or sliced sausage)
2 bell peppers (I had a green and red one)
1/3 red onion
1/4 cup olive oil
1 1/2 teaspoons cajun spice
1 teaspoon cumin
1/2 teaspoon red pepper flakes
salt and pepper to taste

Start cooking the rice, then chop up the bell peppers and onion into small slices. I also remove the shrimp tails but that can be done before or after going in the oven.

In a large gallon-sized ziplock baggie or two, put all your ingredients inside and give it a good shake. This is perfect for storing before cooking as well if you’re taking the food while traveling or camping.

Make an X with two pieces of foil, and put your mixture in the middle. Then tightly overlap the remaining foil over the pile and cut a small hole at the top. After that, just place it in the oven or whatever your chosen heat source for about fifteen to twenty minutes.  Let it cool, uncover and enjoy!
