Let’s face it, getting the little one’s to eat their veggies can be difficult sometimes. Here’s a recipe the whole family will enjoy! Mashed cauliflower is a great substitute for mashed potatoes, and it’s healthier too.
Ingredients:
- A medium head of cauliflower
- Any combination of ingredients you use making regular mashed potatoes like butter, milk, or cream. Minced garlic, or garlic powder, and cheese are also options for adding a little extra flavor.
Cut or separate the florets, and then steam the cauliflower until it’s tender. Add the ingredients to the tender cauliflower and mash them all together. You can use a food processor or blender to puree the cauliflower too. Even add some food dye for extra colorful surprise!
